Fish cakes
It is mostly when they returned, after the Deportation, that the Acadians started fishing as a means of subsistence. Fish was eaten fresh mostly in summer, and either smoked or salted to preserve it for the rest of the year. In fact, still today in Acadie, this practice is the mainstay for many recipes that were handed down from generation to generation.
